Want to dive into a world of new (insect) flavors? This unique food experience is the way to explore it. It is a six-course fine dining event in the warm and cosy atmosphere of Enoteca Pomaio. The extensive menu is a culinary journey into Marco Parrinello chef’s vision on insects as a delicacy. A astonishing and versatile new ingredient able to create new taste sensations within the culinary traditions. The menu is paired with the wine selection singled by Enoteca Pomaio’s sommelier: only great Tuscan craft wines. Marco Parrinello is Crické chef, highly experienced in innovative foods.

Antipasti

  • Antipasto Burrata with Pachino tomato coulis and black ant caviar
  • Seasonal vegetable cricket (flour) tempura in sweet-and-sour sauce
  • Pumpkin vellutata soup with crisp bamboo worms and amaretti

First Course

  • Crické Fusilli with arugula pesto
    or
  • Crické Crespelle filled with crickets and ricotta cheese with taleggio cheese sauce

Second Course

  • Cricket Falafels with yogurt cream and cardamom
    or
  • Cricket burger with caramelised onions

Dessert

  • Crické tarte with chocolate ganache and hazelnuts
    or
  • Apple and mealworms crumble with cinnamon
